Full Bill

WHEREAS, Philadelphia is a city defined by heart, hustle, and heritage-with a culinary legacy as bold and beloved as its people; and

WHEREAS, Kosuke and Tomomi Chujo, founders of Nihonbashi Philly in Tokyo, Japan, have committed themselves to honoring that legacy by serving authentic Philadelphia cuisine, most notably the iconic cheesesteak, with care, precision, and respect; and

WHEREAS, In pursuit of culinary truth, the Chujos made repeated pilgrimages to Philadelphia, walking our streets, visiting our delis and sandwich shops, and tasting cheesesteaks in every neighborhood-not just to replicate a dish, but to understand a culture; and

WHEREAS, During these journeys, the Chujos formed real, lasting friendships with countless Philadelphians-residents, business owners, and fellow food lovers-earning the love and respect of the city they came to honor; and

WHEREAS, Nihonbashi Philly has become a home away from home for Philadelphians abroad-a place where the taste of home meets the warmth of shared experience and genuine hospitality; and

WHEREAS, The Chujos have become ambassadors of Philadelphia abroad, sharing our flavors, values, and soul with the people of Tokyo, while reminding us that Philly pride knows no borders; and

WHEREAS, They embody the spirit of this City: devoted, down-to-earth, and driven by love-for community, for authenticity, and for the stories behind every bite; now, therefore, be it

RESOLVED, BY THE COUNCIL OF PHILADELPHIA, hereby, honors and recognizes Kosuke and Tomomi Chujo of Nihonbashi Philly for their extraordinary efforts to represent and preserve Philadelphia’s culinary identity on the world stage, and for becoming honorary Philadelphians in every sense of the word.
